Ingredients

For the Cajun Shrimp:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning 
  • 1 tbsp olive oil 

For the Creamy Orzo:

  • 1 cup (200g) orzo pasta 
  • 2 tbsp butter 
  • 1 small onion, finely diced 
  • 3 cloves garlic, minced 
  • 2 cups (480ml) chicken or vegetable broth 
  • 1 cup (240ml) heavy cream 
  • 1/2 cup (50g) grated Parmesan cheese 
  • 1 tsp smoked paprika 
  • 1/2 tsp salt (adjust to taste) 
  • 1/4 tsp black pepper 
  • 1 cup grape tomatoes
  • 1 cup spinach

Optional Garnishes:

  • Fresh parsley, chopped 
  • Lemon wedges 

Instructions

  • Prepare the shrimp – In a bowl, toss the shrimp with Cajun seasoning and set aside to marinate for 5-10 minutes.
  • Cook the shrimp – Heat the olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side until pink and cooked through. Remove the shrimp from the skillet and set aside. 
  • Sauté the Aromatics – Reduce the heat to medium. Add the butter to the same skillet. Once melted, sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant. 
  • Cook the Orzo – Stir in the orzo and let it toast for 1-2 minutes. This step enhances the nutty flavor of the pasta. Add the halved tomatoes and sauté for a minute. Pour in the chicken or vegetable broth, bring it to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the orzo is tender and most of the liquid is absorbed, about 10 minutes. 
  • Make it Creamy – Stir in the heavy cream, Parmesan cheese, smoked paprika, salt, and pepper. Mix well until the cheese melts and the sauce is smooth and creamy. Add the spinach and slightly wilt.
  • Combine Shrimp and Orzo – Return the cooked shrimp to the skillet and toss to coat in the creamy sauce. Let everything simmer together for 2-3 minutes to meld the flavors.
  • Serve and Garnish – Remove the skillet from heat. Sprinkle with freshly chopped parsley and serve with lemon wedges for an extra burst of brightness.
