Ingredients

 

  • 8 oz cream cheese (softened) – Place at room temperature for 30-60 minutes so it will be soft enough to whip
  • 1 cup powdered sugar – sifted to remove any lumps
  • 1 cup whipped cream – store-bought Cool-whip or homemade whipped cream
  • 1/2 cup brown sugar – I use light brown sugar, but dark brown sugar can also be used
  • 1 cup pecans (chopped) – You can buy whole pecans and chop them
  • 2 teaspoons vanilla extract 
  • 4 tablespoons butter – salted butter helps add contrast to the sweetness of the dip.
  • ½ cup light corn syrup 
  • dash of salt 
  • apple slices, graham crackers, pretzels, or vanilla wafers for dipping!

– Toppings: Additional chopped pecans, whipped cream, or caramel sauce

In a large mixing bowl, combine the softened 8 oz cream cheese, 1 cup powdered sugar, and1 cup whipped cream. Using an electric mixer, beat the mixture until it’s smooth and creamy. This will be the base of your dip. Pour and smooth into the bottom of the pie pan. Chill in refrigerator while making the pecan mixture.

2. PECAN MIXTURE. In a medium saucepan over medium-high heat, melt 4 tablespoons butter and add ½ cup brown sugar, ½ cup corn syrup, 1 cup pecans, and a dash of salt. Stirring occasionally, bring to a simmer. Remove from heat, add 2 teaspoons vanilla, and let cool for 8 minutes.

3. MIX. Remove the cream cheese mixture from the fridge. Stir and pour the pecan mixture over the cream cheese and serve immediately.

  • Make in advance. You can make this dip up to 2 days in advance and keep it stored in the refrigerator.
  • Store. Keep the dip covered and refrigerated. It can be made 2 days ahead of time, or leftovers can be stored for up to 4 days.
